Ingredients
  

  • 8 oz Cream Cheese
  • 1/3 cup Powdered sugar
  • 1 tbsp Pure vanilla extract
  • 1/4 cup Heavy cream
  • 8 oz Cool Whip thawed overnight in the fridge
For the fruit
  • Cups fresh strawberries Hulled and sliced into quarters
  • 1 Cup fresh blueberries
  • 1 cup fresh raspberries
  • ½ cup fresh blackberries (optional but wonderful)

Method
 

  1. Soften cream cheese on the counter for 1 hour.
  2. Wash and thoroughly dry all berries; slice strawberries.
  3. Beat cream cheese until completely smooth (1–2 min).
  4. Add powdered sugar, vanilla, and heavy cream; beat until fluffy (2 min).
  5. Gently fold in thawed Cool Whip with a spatula.
  6. Add berries and fold gently until coated.
  7. Chill 30 minutes, garnish with extra berries and mint, serve cold.
  8. • Always pat berries completely dry — excess moisture is the enemy of a thick, creamy salad.
    • For the smoothest filling, your cream cheese must be fully room temperature before beating.
