- Soften cream cheese on the counter for 1 hour.
- Wash and thoroughly dry all berries; slice strawberries.
- Beat cream cheese until completely smooth (1–2 min).
- Add powdered sugar, vanilla, and heavy cream; beat until fluffy (2 min).
- Gently fold in thawed Cool Whip with a spatula.
- Add berries and fold gently until coated.
- Chill 30 minutes, garnish with extra berries and mint, serve cold.
