Cheesy Keto Ground Beef Casserole With Spinach and Mushrooms

Ingredients
  

  • lbs ground beef 80/20
  • 1 tbsp olive oil
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 8 oz cremini mushrooms sliced
  • 3 cups fresh baby spinach chopped
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt ¼ tsp black pepper
  • 4 oz cream cheese softened
  • ½ cup heavy whipping cream
  • ½ cup beef broth
  • 1 tbsp Worcestershire sauce
  • ½ tsp garlic powder
  • 1 cup shredded sharp cheddar
  • 1 cup shredded mozzarella
  • Fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F. Grease a 9x13 inch baking dish.
  2. Brown ground beef in a skillet over medium-high heat, 7–8 minutes. Drain fat.
  3. In the same skillet, sauté onion 3–4 minutes, add garlic 30 seconds, then mushrooms 5–6 minutes until golden.
  4. Return beef to skillet. Add spinach and seasonings. Stir and cook 2 minutes until spinach wilts.
  5. Melt cream cheese into the mixture. Add heavy cream, broth, Worcestershire, and garlic powder. Stir until smooth.
  6. Transfer to baking dish. Top evenly with combined cheddar and mozzarella.
  7. Bake uncovered 20–25 minutes until golden and bubbling. Broil 2–3 minutes for deeper color if desired.
  8. Rest 5 minutes, garnish with parsley, and serve.

Notes

Storage Instructions:
  • Fridge: Store in an airtight container for up to 4 days. Reheat in microwave 2–3 minutes or in oven at 350°F for 15 minutes.
Freezer: Cool completely, portion into freezer-safe containers, and freeze for up to 3 months. Thaw overnight in the fridge before reheating.
