Keto Mozzarella Stuffed Meatballs

Ingredients
  

  • 1 lb ground beef (80/20)
  • 1 large egg
  • ¼ cup  grated Parmesan
  • 2 tbsp almond flour
  • 2 cloves garlic, minced
  • 1  tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2  tbsp fresh parsley, chopped
  • 4 oz fresh mozzarella, cut into 12 cubes

Method
 

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Mix beef, egg, Parmesan, almond flour, garlic, and seasonings until just combined.
  3. Divide into 12 portions. Flatten each, place a mozzarella cube in the center, seal and roll into a ball.
  4. Place on baking sheet and bake 18–22 minutes until cooked through.
  5. Broil 2 minutes for extra browning if desired. Rest 3–5 minutes before serving.

Notes

Storage Instructions:
  • Fridge: Store in an airtight container for up to 4 days. Reheat in the microwave or oven at 350°F for 8 minutes.
  • Freezer: Freeze in a single layer, then bag. Keeps up to 3 months. Reheat from frozen at 350°F for 15 minutes.
