Keto Taco Salad with Ground Beef

Ingredients
  

  • 1 lb ground beef 80/20
  • 1 tbsp olive oil
  • 1 tsp chili powder 1 tsp cumin, ½ tsp smoked paprika, ½ tsp garlic powder, ½ tsp onion powder, ¼ tsp oregano, ½ tsp salt, ¼ tsp black pepper
  • 2 tbsp water
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • ½ red onion diced
  • 1 avocado diced
  • ½ cup shredded cheddar cheese
  • ¼ cup sour cream
  • ¼ cup salsa or pico de gallo
  • 1 tbsp lime juice
  • 2 tbsp fresh cilantro

Method
 

  1. Heat oil in a skillet over medium-high. Add beef and brown, breaking apart.
  2. Drain excess fat. Add all spices and water. Stir and simmer 2–3 minutes.
  3. Chop romaine and add to serving bowls.
  4. Top with tomatoes, onion, avocado, and cheddar.
  5. Spoon warm seasoned beef over the salad.
  6. Finish with sour cream, salsa, lime juice, and cilantro. Serve immediately.

Notes

Storage Instructions:
Fridge: Store beef and salad components separately in airtight containers for up to 3 days. Assemble fresh before eating. Do not store assembled salad.
